Introduction to Food & Beverage Management

Food & Beverage service is very important department in Hospitality & Tourism Management. It is not only serving properly and politely to guest, but it is also taking care safety, cleaning, pleasant and orderly to guest. In this essay I am going to explain about a Food & Beverage menu with pricing of a restaurant/ bar.

Brief explanation about Food and Beverage

· Food: In once meal, we usually have 3 kinds of food such as starter, main course and dessert.

· Beverage: included non-alcoholic, alcoholic and mixed drinks.

Ø FOOD:

+ Starter plays a part into increasing the attention of customers such as salads, soups and cakes. All of them have nice tastes and flavors: besides, they are very good for digestion.

+ Main course

The main course is usually the heaviest, heartiest, and most complex or substantive dish on a menu. The main ingredient is usually meat or fish; in vegetarian meals, the main course sometimes attempts to mimic a meat course. It is most often preceded by an appetizer, soup, or salad, and followed by a dessert. For those reasons the main course is sometimes referred to as the "meat course".

Husband Mart

A store that sells husbands has just opened in Ottawa where a woman may go to choose a husband from among many men. The store is comprised of 6 floors, and the men increase in positive attributes as the shopper ascends the flights.

There is, however, a catch. As you open the door to any floor you may choose a man from that floor, but if you go up a floor, you cannot go back down except to exit the building.

So a woman goes to the shopping center to find a husband. On the first floor the sign on the door reads:

The woman reads the sign and says to herself, "Well, that's better than my last boyfriend, but I wonder what's further up?"

So up she goes.

Global warming returns after two-year hiatus

Climate data released in January 1995 shows that the earth is once again getting warmer. This trend, called global warning, first gained international attention in the late 1980s. For much of that decade, the earth’s temperature was warmer than average. By 1990, the global average temperature reached 59.8 degrees Fahrenheit. This was the highest temperature record since 1880, the year in which climate records were first kept.

From 1991 through 1993, however, a two-year cooling period occurred. This was precipitated by the mid-1991 eruption of the Mount Pina tobo colcano in the Philippines. The eruption spewed dust and sulfur particles into the earth’s atmosphere. These particles reflected the sun’s heat and allowed the earth to cool. With much of this atmospheric dust now settled back to the ground, global warning has resumed.

Although climatologists agree that a warming is under way, not all of them agree on its cause or its significance. Over the past 100 years, the earth has warmed about one degree Fahrenheit. This, say some scientists, is a very slight increase. Therefore, they believe the warm temperatures are caused merely by a natural fluctuation in the earth’s climate pattern. Therefore, they believe the trend will ultimately reserve itself.

Other scientists, however, believe global warning is here to stay. And if they are correct, the earth’s climate patterns could be altered drastically. Dr. James Hansen is a scientist at the Goddard Institute for Space Studies. He says the rising temperatures are caused by the buildup of carbon dioxide and other gases in the atmosphere. These gases are called greenhouse gases because they operate in much the same way the glass panes of a greenhouse do.

The airborne gases allow sunlight to pierce through the atmosphere and reach the earth. The sunlight is then transformed into heat energy, which is trapped in by the gases. Since this energy can not escape back into space, it heats up the earth.

As the amount of greenhouse gases in the atmosphere increases, so too does the problem of global warming. Although many gases contribute to the greenhouse effect, carbon dioxide is the main culprit. Carbon dioxide is released into the air every time a fossil fuel, such as oil, coal or wood, is burned. Therefore, every time car is driven or a furnace is stoked, the greenhouse problem grows worse.

Deforestation is also a contributor to global warming. Each and every second, a rain forest the size of a football field is destroyed. This exacerbates the greenhouse effect in two ways. Plants, trees and vegetation consume carbon dioxide in much the same way that humans consume oxygen. Therefore, as a rain forests disappear, there is less vegetation to absorb the carbon dioxide produced on earth. And since most of the forests are burned, the resulting fires release large amounts of carbon dioxide.

Between the years of 1870 and 1970, 400 billion tons of carbon dioxide were released into the atmosphere. By 1989, another 400 billion tons had been pumped into the air. Every day, the amount of carbon dioxide in the atmosphere grows by approximately 60 million tons.

If such emissions are not curbed, the concentration of greenhouse gases in the atmosphere could double by the end of the next century. This would cause the earth to warm an additional three to eight degrees Fahrenheit. Four degrees Fahrenheit is the most common estimate, however.

A warm-up of four degrees would cause great changes in the earth’s climate and weather patterns. Ice caps at both poles would begin to melt, causing sea levels to rise. Extreme weather conditions such as floods, droughts and harsh storms would become more common. Cold and heat waves would become more frequent and severe, endangering many lives.

To avoid this situation, experts say we must reduce our emission of greenhouse gases. And each person can make a difference. Planning a tree, turning off unused lights, biking instead of driving—each of these activities are small but important steps that will help the earth keep its cool.

I am not alone.

Everyday I ask myself, thinking of what I have done before, what I am doing and what I will do. Nobody can understand me, nobody can listen to me and nobody can exchange confidences. That’s so sad!

I want to kill myself by a knife but I am so scare the knife. I want to jump out the window but I am so scare the altitude. I want to drown myself but I hate to feel as if I am choking. Satya, she always says that I am a lecherous man so I also can not be a monk.

What can I do now? I think I only have a way, I must try my best with my studies and finish them as soon as possible. I will find a good job in a good country, I will earn lots of money and take care of my son. I will have a happy family in the future. Yes, I think so because I have already tried my best.

The legend of To Thi rock bringing her baby in her arm

A long time ago, in the northen part of Vietnam, there was a widow, she had to go to a river to catch crabs and snails everyday to bring up two her children, a boy and a girl. The boy was To Van, he was ten years old and the girl was To Thi, she was about eight. They played together all day and they were very naughty.

One day, To Van threw a stone to play with his sister and suddenly the stone hit To Thi’s head. To Thi fell into a dead faint from fright and blood ran out of her head. To Van was very scare and he ran out the road as fast as he could.

Fortunately, after that a neighbor came and saved To Thi’s life. When the widow came back, To Thi could sit up but To Van did not come back.

He went away without a trace. Day after day, the widow found everywhere but she could not find him. The widow missed him very much and she was sick. Then the widow died and left To Thi alone. The neighbor brought up To Thi and a few months later all of them moved out of their house to another place, near Lang Son.

To Thi grew up and became a very beautiful and perfect girl, so there were lots of men wanted to date with her. She worked in a small food shop. There were lots of customers in her shop, most of them not only came there for food but they also came for asking her.

One day, there was a young man who was over twenty, he brought Chinese traditional medicine from Cao Bang to Lang Son to sell. He heard about To Thi’s shop and he looked for it. He came to the shop many times and they fell in love. They got married and a year later they had a baby girl.

One day, the husband was sitting on the stair and he was telling some funny stories to his wife. His wife was washing her hair, suddenly the husband saw a scar on her head and asked her about it. The wife told him why she had the scar on her head and the husband’s face became white. He knew exactly that his wife was also his sister. He was very sad and wretched about that. Before he thought that his sister might die, so he could not go back his house because he could not explain to his mother about his stupid action. And he thought that if he goes far away again, his sister may be able to get married again because she is still young and she did not know about their story.

He decided to join the army to forget everything. He wrote a letter and left his sister again. To Thi was sad and she cried a lot. Day after day and night after night, she carried her baby and went to the Tam Thanh temple to pray for her husband and cried. She went to the temple everyday and waited for her husband wretchedly but her husband did not go back.

One day, it was dark and there was a heavy rainstorm, To Thi missed her husband very much and she climbed up a rock. She stared into the horizon and she cried. Suddenly, there were lots of thunder and lightning, the mountain shook. It rained heavier but she still stood there with her baby on the rock.

Next day, the weather was calm and the sun was bright over the forest without wind. Everybody saw To Thi but she became a rock with her baby in her arm.

Nowadays, there are still lots of tourists who travel to Lang Son to see the legend rock and they can hear the story in many ways. There was a Vietnamese folk about the rock:

“Dong Dang has Ky Lua street,
A To Thi rock and Tam Thanh temple”

Begin a day with my favourite job

I have been living in a small town for 25 years. I start my work every early morning. I have to cut lots of grass, vegetables and bulbs for my animals. I’ve got a lot of cows, pigs, chickens, ducks, horses and dogs. I’ve got a big garden with mangoes, lemons, oranges, mangosteens and bananas. I have been taking care of them for 10years. I sometimes go to a market near my town to buy something for my family. I don’t need to go many times a month because we have already had food, meats, milk, vegetables and fruits here. Although I have to work hard everyday but I have a happy family and my children have gone to school. I will always love my job, a farmer.

My ambition

I’m studying English in Singapore and I’m going to finish 2 weeks later. After that I’m going to study Diploma, Higher Diploma and Degree in Tourism, Leisure and Hospitality for 2 and a half year in this country. When I finish my studies, I’m going back Vietnam and help my family to manage a hotel. I’d like to study further to acheive a Masters in an Europe country if I have enough money to do. I may get married when I finish Degree but I’m not sure. I’d like to have a happy family and some children in the future. If I have a happy family in my country, I’ll take care them and my parents. I’ll try my best to do that.

My English teacher

Satya is my english teacher in Singapore. She is 30 years old and she from Brazil. She came to Singapore to be a teacher 8 years ago.

She is tall and a little fat. She has green eyes and double eyelids. She has blonde long hair. She has a long neck and her skin is dark. She has a very nice voice, when she speaks it sounds like a bird singing.

She is a caring person and she always listens to the students. She is very funny in class ans she can tell a lot of jokes. We are very interested in the lessons when we are in school. She is revy smart because she can understand our ideas when we explain something. Satya is the perfect English teacher that I have ever seen. I love her very much and I will never forget her.
